CHICKEN DONBURI / Yamituski Dori Donburi (chicken bento box)

Serving Direction: Please pour sauce in a sauce cup over the chicken and rice if you got your bento box to go. If you got yours for patio dining the sauce is already on your Donburi.

This chicken dish became very popular a couple years ago in Japan.  "Yamituski" means irresistible in Japanese.  You will understand why it is called Yamitsuki when you taste this special sauce. KUKURI made it into our style of Donburi dish with Yamitsuki chicken over the California-grown organic rice. 

We use organic chicken breast.  It is lightly steamed topped with fresh Cilantro sprouts from Eco Friendly Greens and House-made beet Gari/pickeled "ginger" .  The sauce is made with two different kind of house-made Ra-yu/Asian garlic oil and house-made Kaeshi sauce.

AVOCADO TOFU SHISO DONBURI (Vegan bento box)

This is KUKURI's original vegan Donburi/rice bowl dish. We use California-grown oganic rice.  Avocado and Organic tofu are marinated in this special teriyaki like sauce which is made with house-made Kaeshi sauce and Ra-yu/Asian garlic oil.  It is such a simple dish yet all umami is in the sauce with Nori seawed and Sesame seed.  House-made beet Gari/pickeled "ginger" , Green shiso leaf (like a Japanese basile) and Kaiware/Radish sprouts are on the top to give a refreshing flavors.

NITAMAGO/ TERIYAKI SOFT BOILED EGG (Chicken bento box)

This is a soft boiled egg which is flavored with Teriyaki Sauce.  Another name is Ramen egg.  This is one of the most popular topping for ramen noodle.  We use organic free range eggs form Common Kettle Farm in Orangevale.

STEAMED GREEN BEENS WITH SESAME SAUCE / Sayaingen no Goma-ae

This is a seasonal vegetable dish.  "Ae" means dressed with sauce or dressing.  Steamed spinach is commonly used and dressed with saysauce or Kaeshi sauce.  We would like to use seasonal fresh vegetables from a local farmers market and we saw green beans this week!  It is summer time! Goma is sesame seed.  We freshly toast and ground ours.  Enjoy the fresh toasted seasame seeds!

CELERY SALAD WITH SAKEKASU WASABI Dressing

This is not a common dish rather a modern fusion dish.  Sakekasu is a byproduct from Sake making.  It contains probiotics and slight sake flavor with little or no alcohol. Fresh raw celery is dressed with Sakekasu, wasabi and house-made Chickpea white miso dressing.  There are almonds, pumpkin seeds and sunflower seeds in it.

 

PICKLED NAPA CABBAGE with SALTED LEMON

Here is another probiotic dish for you.  This is one of the simplest Tsukemono/fermented vegetable you can make.  Only vegetable and salt.  We add Kombu seaweed to enhance Umami.  Kombu is a great source for minerals and it is known to chelate heavy metals form your body.   We added house-made salted/fermented lemon to give a nice refreshing flavor and more probiotics. we also use Hymalayan rock salt and Celtic salt.

PICKLED DAIKON RADISH (or beet)

KUKURI's original pickled seasonal vegetable.   Our pickled Daikon is filled with healthy probiotics to help you digest your bento box.  We use pink Himalayan rock salt and Celtic salt to provide plenty of minerals to your body.

MATCHA CREAM ANMITSU

Have you had this Japanese summer dessert before? This is a KUKURI version of Matcha cream Anmitsu.

KUKURI Cream Anmitsu have vanilla ice cream (dairy or vegan) with organic freshly made Koicha/thick Matcha, ceremonial grade Green tea, Anko/sweet adzuki bean, galaxy Kanten/Agar agar (seaweed) Jel-o, organic fresh strawberries from local farmers market, Shirahama Mochi in syrup.  We have three mochi in Anmitsu.  One is plain, pink one is made with beet, green one is made with Asian Mugwort which is known to cleanse your blood.  Kanten Jel-o is colord with red cabbage and lemon.  Enjoy!
